Crunchy Butterscotch Cookies

Ingredients:

  • 1 cup golden shortening250 mL
  • 3/4 cup granulated sugar175 mL
  • 1/2 cup packed brown sugar125 mL
  • 2 eggs2
  • 1 1/2 cups all-purpose flour375 mL
  • 2 tsp baking powder10 mL
  • 3 cups corn flakes cereal, slightly crushed750 mL
  • 1 pkg CHIPITS® Butterscotch Chips300 g
  • 1 cup sweetened flaked coconut250 mL

Directions:

  1. Heat oven to 350°F (180°C). Lightly grease baking sheet or lined with parchment paper.

  2. In large bowl, beat shortening and sugars until fluffy. Beat in eggs until creamy.

  3. In medium bowl, mix flour and baking powder. Stir into creamed until blended.

  4. Stir in cereal, butterscotch chips and coconut until combined. Drop dough by spoonfuls onto prepared baking sheet.

  5. Bake 8 to 10 minutes, until golden. Let cool for 2 minutes on sheet, then transfer to rack and cool completely.

    Makes about 5 dozen cookies.
