Chocolate Mint Nanaimo Bars

Ingredients:


BASE

  • 1 cup CHIPITS® Semi-Sweet Mint Chocolate Chips250 mL
  • 1/2 cup butter125 mL
  • 1 1/4 cups graham wafer crumbs300 mL
  • 1 cup flaked coconut250 mL
  • 1/2 cup finely chopped walnuts or pecans125 mL

FILLING

  • 2 cups icing sugar500 mL
  • 1/4 cup butter, softened50 mL
  • 3 tbsp milk45 mL
  • 2 tbsp custard powder30 mL
  • 1 tsp mint extract5 mL
  • Green food colouring 

MINT CHOCOLATE GLAZE

  • 3/4 cup CHIPITS® Semi-Sweet Mint Chocolate Chips175 mL
  • 2 tsp vegetable oil10 mL

Directions:

  1. BASE: In medium saucepan over low heat (or in large bowl in microwave) melt mint chocolate chips and butter. Stir in graham wafer crumbs, coconut and nuts. Press evenly into 9-inch (23 cm) square pan. Chill in refrigerator about 30 minutes.

  2. FILLING: In small bowl, blend icing sugar, butter, milk, custard powder, mint extract and several drops of food colouring. Spread evenly over chilled base.

  3. GLAZE: Melt mint chocolate chips with vegetable oil over hot water (or in microwave). Spread evenly over filling. Chill. Cut into bars.

    Makes about 20 bars.

Some suggestions for the topping: 1. Substitute butter for the vegetable oil 2. At Christmas time, crush 2 candy canes and sprinkle on top 3. Score the topping with a sharp knife for easier cutting later on.
